1. Milk 500ml
  2. Eggs 2
  3. Gelatine 15gm
  4. Cream 15gm
  5. Cherries 10gm
  6. Sugar 55gm
  7. Coffee essence


  1. Soak gelatin in a little warm water for 5 minutes.
  2. Separate yolks and white of eggs.
  3. Beat yolks and sugar thoroughly.
  4. Warm milk and pour over the mixture.
  5. Put in double saucepan over low flame and cook till custard thickens.
  6. Remove from fire and add dissolved gelatin and essence.
  7. Cool and fold in stiffly beaten whites of eggs.
  8. Set in refrigerator.
  9. Turn out and decorate with whipped cream and glace cherries.
